White spots, streaks, or “haze” on Bündnerfleisch or dried meat – what is it?

These are protein blooms. They can occur in dried meat products that have been dried for a long time and are a sign of good maturation. These protein blooms are influenced by the quality of the raw material (age of the animal, feed, husbandry, etc.). They are natural and harmless. The meat can be consumed without hesitation.

Bündnerfleisch or dried meat with meat from the EU/South America?

As a Swiss company, we strive to use Swiss raw materials wherever possible. Demand in Switzerland is too high to be met with domestic meat alone. For this reason, we have to use meat from the EU/South America, among other places, in order to meet demand.

Can Bündnerfleisch, the specialty from the Grisons mountains, be produced using meat from Uruguay, for example?

Yes. Bündnerfleisch may be produced with the declaration “Produced in Switzerland using meat from Uruguay, for example.” The decisive factor is that the processing, i.e., the production according to traditional methods, takes place in Grisons and the origin of the raw material is declared transparently.

Since there is not enough beef available in Switzerland to fully meet demand, meat from abroad is used.

Factory tour

Unfortunately, for hygiene reasons, we are unable to offer tours of our production facilities.

Private orders

We do not currently offer shipping for private orders. You are welcome to visit our Grischuna shops and purchase our products directly there.
